Sperm in and of itself most likely has little taste because it's microscopic. Semen, on the other hand, as with most, um, "foods" some like it better than others. I've given oral to many guys. Surprisingly (when I think about it) more often then they did it to me.
I guess the big idea about it all is sensations. For the guy who's having it done, it's SUPPOSED to feel good (not always the case.) That's why so many like it. But it's not necessary.
