Because having something in your mouth gets the saliva going. And gagging tends to make one's mouth water a little. The same thing happens to me, but I don't spit when I have excess saliva building up, I just swallow it and keep going.

If you have something in your mouth, it's just natural to salivate. And if you have it in there for a long period of time, the spit just accumulates.
Seriously? Stick a cucumber down your throat a couple dozen times and see how much you spit. She's a human being, not a robot. If you're getting deepthroat, the only thing you should be saying is "thank you."
