well I think first it shows that you are really into the guy and willing to do something that is very intimate.

I also think (and this I my personal feeling) that it is just a much better feel when getting oral to have no interruption in the pleasure. Like when a guy is giving oral to a girl as the girl is about to orgasm I'd imagine it feels much better if the guy keeps going since the sensitivity during this time is heightened and the same is with oral for a guy. Stopping and pulling it out of your mouth and then finishing with a hand or whatever is just not as pleasurable... to me anyway
