There is no adrenaline release during orgasm unless you were having sex with someone or something intent on killing you or you were having sex in a particularly scary situation. But both of these situations would release adrenaline even without the sex.
You breathe heavily because orgasm is an extremely laborious process. It is physically taxing on your body. As your muscles across your body tense they use up a lot of energy very rapidly just to hold that temporary pre-climax clench. This energy to hold the clench requires a large amount of oxygen to maintain. Thus the heavy breathing. Additionally the orgasm itself leads to multiple muscle groups going into spasms, using even more energy than the initial clench in those muscle groups.
Finally the actual climax/ejaculation is driven by norepinephrine, which should not speed up breathing as it is released locally... but it is not unbelievable to believe that it can move systemically and reach the lungs or brain where it can stimulate a few different effects that sum up to "faster deeper breathing". But that only happens right at climax, not at the build up.

having sex raises your blood pressure and causes various things...including that. I do the same thing. and if its realllllly good then I end up holding my breath until its over which then makes me breathe hard. lol. and I also sometimes notice I start to sweat. but like just barely on my forehead...not like drenched in buckets of sweat. like only enough to where I would notice.
