Besides sex, what makes a guy stay interested in his girlfriend?

There has to be a desire to share your life with someone (not everyone has that), and the girl needs to have a high level of long-term compatibility with him. That means that things like morals, values, and life-goals need to be compatible (not always necessarily identical, but at least compatible). You can't have a religious person and a person who is against religion. You can't have a person who wants to get married and one who doesn't, or one wants kids and the other doesn't.

Things like that won't matter for a casual sex relationship, because you won't be dealing with those things, but they are a huge deal in a real committed relationship, and too many people either forget that or just ignore it, and then wonder why their relationships blow up. But if you find a person you have high compatibility with, then not only is it much easier, but what differences they do have will mostly be a benefit rather than a liability. And when you have a good partner, most of life seems easier because you're working through life's problems together, and your good times are much better because you've got someone to share them with. The comfort and fulfillment of that can't be bought at any price.

A relationship is not built on sex, yes it may be part of it, however it’s not the reason for a relationship.

being there for each other, compatibility, emotional connection, being able to talk to each other, liking even loving each other.

none of the above needs sex, yes it does help but it’s not a 100% requirement.

if you are in a relationship where if you remove the sex, then you are not actually in a real relationship and are just being used.

Personally sex ain't in my list if i have a girlfriend because i believe that sex comes after marriage which means if i'm with her than it means i truly love her and going to marry her... Sex comes after marriage 😌

@sophxoxo Good answer. True love can maintain a loving and caring relationship even if sex is no longer possible. Over 14 years ago penetration became rather painful for my wife due to a dry vagina as a result of menopause. Giving up sex was difficult at first and I still have a desire to have sex with her. We have continued to sleep together in the same bed; just panties and cuddling.
