For most women, it is highly subjective. It depends on the quality of the orgasm they experience, the time they can dedicate to sexuality (people have things that need to get done besides sex), the limits of their body (sometimes women can be too sensitive to keep prolonged pressure or they aren't feeling well, headache, stomach ache, etc), the desire for other non-sexual forms of intimacy, and the overall level of satisfaction already experienced.
Just because a woman can go on for hours having orgasm after orgasm doesn't mean she needs to or wants to. Sometimes one or two is enough to scratch that itch and a warm embrace by someone they love is much more satisfying than continuing on for its own sake.
I guess the best way to put it is think back to a time when you had a hard time orgasming. For one reason or another, your body wasn't really getting there but you were still erect. Some sex play is fun but at the end of the day, you don't feel like you HAVE to orgasm even though anatomically all the gears are there to make it happen.
I imagine it is much like that. A woman can keep going but sometimes it just isn't that important. So to get back to the original question, it depends. Sometimes it is zero orgasms if attempting to chase one will cause more frustration than its worth. Sometimes its one if it gives that satisfaction. Sometimes two is enough and sometimes, they are just riding the ride for however many they can get.
As for your GF, she may be asexual. The best thing to do is to talk to her about it and let he know what your needs are. If she can't or won't fulfill them, it may be time to just move on.
