Learn each others likes
I think this is best to be a learn as you go type of thing. Where you can feel each other out. Going to fast may burn each other out or scare each other off.
Sexual preferences meaning what you like and don't like in bed? It's definitely something to talk about, either before or during. And many don't (women especially).
If you're chatting and getting to know each other before dating you could mention it. I wouldn't find it a turn off. It's better to find out you're not sexually compatible sooner than later.
