The only guy that wanted me to call him daddy during sex was just really into sub/Dom. So I think it just has to do with power, being dominant and not actual "incest fantasy".

I call my man daddy because he's the farther of my children and if i called him by name my kids would repeat and not call him daddy. Usually it's about the woman herself. We tend to like feeling delicate and small, as that's sort of what we're expected to be as women. It isn't always about calling their man daddy that turns them on, it's the fact that it makes them feel young and delicate. At least that's how I see it, but everyone is different. I've never really enjoyed the word "daddy" in that sense though.

It's a thing for both genders. But I believe it comes down to the submissive/dominant factors for both. I wouldn't say "mommy" is the right word, I have heard "mami" a few times tho, but that's in the way of "ay mami/papi". I use "daddy" if the guy is into it, I don't really care myself.
