Him: “When I first met you, I thought you were a prude about sex. I thought you would only give me sex on special occasions.”😂
Me: “Um... okay...😂😂 Sure! Go ahead and believe that. You’d be REAL shocked. Oh if you only knew certain things.”
Him: “I want to know those things, but let’s not go there yet or else I’m going to keep thinking about all of it”
This is the same guy that wants to be a pastor. Would you be excited if your girlfriend said this to ya?

I don't know your religion, nor is it of particular interest to me in this discussion. If you wish to wait until marriage then do so. Your boyfriend is trying to maintain some kind of Catholic Priest genre with staying celibacy and if that's his thing, great! He's human and is afraid he will start jerking off, (more?), if he dreamed of some of the things you would like to do.
I wouldn't partake in "saving sex for marriage" so it wouldn't happen. If she said something similar in a standard relationship, I would tell her teasingly "How about you shock me right now?"
