Because they want to.
Sometimes they do that to be playful, but I have seen it most of the time when they have a kid who is at the stage where they are close to talking, and parents want to get the names imprinted with the child.

The womens I've been with called me daddy cuz they had daddy issues but ya know..
It's a Freudian kink. Some people have an oedipus complex (men wanting mom and women wanting dad), how people get it isn't too well known but there are a couple of interesting theories you can read on wikipedia. Some people even find it comforting.
I think it's just a fun pet name. Through I would personally never call my wife "Mommy" because I think that's weird. (I don't even call my own mother "Mommy.". I call her Mom.). But if she wants to call me Daddy occasionally, that's fine with me. (Though preferably mostly in the bedroom.). I don't care either way, though. It's not something I need to be called. I'm open-minded regarding this issue; I'm not too particular about it.
